How To: Girl’s Only Taco Night

My gal pals and I try to get together atleast once every 2 weeks to do dinner and just hang out. This week, I decided to host a Girl’s Only Taco Night. Let me tell ya- easiest party ever! I planned and bought everything the day of. Wham Bam Thank You Ma’am.

My cousin gave me a recipe for homemade chips BUT I bought some just incase things went bad. They were SO good and easy. Just cut a bunch of small tortillas into 6 pieces and fry them up in oil. Finish them with a good bit of salt.

The gal’s job was the drinks. I’ve GOT to learn how to make sangria.

The girls also brought some yummy desserts, too. Between Cherry Cheesecake, Cake Balls, Cupcakes, and Pumpkin Pound Cake- we were well on our way to a siesta.

How To: An Indoor Picnic

Ever have those nights where you want a little bit of everything for dinner? You can’t think of one certain food group? I had one of those moments the other night and decided to embrace it. Mission: Tasting Party.

Poor Aaron has to deal with this behavior. He never gets a say. I had set up our table and started photographing and he still didn’t realize what was happening. haha

First item: Cheese and Crackers (see- I was craving this concoction from Social!)

I also had egg rolls as an appetizer but they looked ugly so I didn’t take a picture of them.

Entree: Adrienne’s Chicken Pockets (cut up chicken, onion, and cream cheese baked into a crescent roll- YUM)

Baked Cinnamon Apples

Mashed Potatoes with crushed up Potato Chips (hey- it seemed like a good idea at the time)

Dessert- Vanilla pudding with leftover Penis cookie crumbled on top

And I had some leftover crescent roll so I made a S’more Crossiant with chocolate chips and marshmellows.

Good thing it worked out.. ha!

How To: Naughty Sugar Cookies

If you were interested in my naughty cookies from the Bachelorette party- here’s the recipe. They are just so much better homemade!

I love this recipe from Sweetopia HERE. Sweet and light cookie… but it uses a cluster of BUTTER!

This recipe makes a lot of cookies and you’ll need them all because some might burn or break. I had enough to divide the dough and color one pink. hehe

A few screw-ups to be expected:

Extra sugar makes the cookies the perfect sweetness. Put them in for a minute, pull them out and sugar so it sticks, then continue baking. So happy to share them with you all.. even though they are a bit naughty!

A Week of Happy Hours

Nothing better than a few Happy Hours a week! On Monday night, the girls and I decided to start a Book Club since we all read 50 Shades of Grey. With sushi and wine at Soho, the book was maybe discussed for 5 minutes if that. So much for that idea. Loved having a girl’s night though. It was absolutely perfect to catch up with the gals.

Just yesterday, all the work friends went to Bandito’s. Look at all of our yummy cocktails! Mmmm Hard to beat a margarita!

Nurtisystem Update

I’m on Nutrisystem and I’ve come to find out, I’m not very good at diets. I have already cheated twice this week, my calves hurt from working out (on MONDAY) and I bought chocolate chip cookies yesterday at BiLo so now they are just sitting there in the kitchen waiting to be snacked on. Yes, I could have avoided those nachos at lunch yesterday and yes, I could have kept a workout routine that wouldn’t make me look like I was 80 years old walking down the stairs last night at the movies but no, I probably wouldn’t have resisted those chocolate chip cookies. ha- I was bound and determined to get them. I passed them 3 times before I gave up and gave in. Of course- you can’t put something back once it’s in your cart- grocery etiquette. or what I tell myself.

I’m not a freak about weight. I prefer to be healthy than worry about a certain size. I do realize that I like being fit so I want to get back on track. Last year, I did the Tracy Anderson Method and felt amazing so I’m hoping Nurtisystem + Tracy = healthy. I’m much happier on Nutrisystem than her diet plan though. (even though I cheat) Tracy was making me eat smashed parsnips and green kale shots. NOT HAPPENING. Plus I had to buy all these silly ingredients I never cook with that cost more than her workout video. Nutrisystem is not that expensive and you eat extra things you’d normally eat on a diet like yogurt and salads. Much better. It’s sick to say that I feel the food is like a little surprise to me each day. You think you’re getting this:

It really all taste pretty good and I’ve never felt hungry. I’m actually eating more now than I did before. They make you snack between meals where as before, I only ate a big lunch and dinner and no snacks or breakfast. By eating a little bit all day, I think it will really help my metabolism. Mom is trying this with me and so far, it’s been great. We’ll see how our trip this weekend together works. It’s hard to eat well when you’re on the road. Wish me good luck!

Last Monday, the much anticipated Bandito’s Oceanfront Restaurant & Mexican Cantina opened! I went to the Grand Opening because I’m doing a couple of special projects with them. Here are some photos of the awesome restaurant and food!
